Liptovské droby have long been a favorite delicacy of the people of the Liptov region, enjoyed at celebrations, fairs, and traditional feasts. Everything began with the arrival of potatoes in what is now Slovakia. The craftsmanship of Liptovské droby makers was passed down from generation to generation. Our company produces this delicious specialty according to a traditional recipe, and we recommend it as a quick and tasty lunch or dinner for the whole family.
Protected designation granted by the European Commission
In February 2021, our Liptovské droby received protection from the European Commission
in the Register of Protected Geographical Indications.
They are therefore a unique gastronomic product worldwide.
The production process and origin of raw materials are documented in production records.
As a registered product under the EU quality scheme,
Liptovské droby must meet strict criteria.
The guarantee of origin from the protected region is ensured by the geographical location
of the production site. Compliance with the specification and product quality
is monitored through regular sensory evaluation by the local civic association

The first preserved recipe for Liptovské droby dates back to 1944
Potatoes began to be cultivated in the Liptov region in the mid-18th century.
Over time, they became a staple food and earned the nickname “the second bread.”
The defined geographical area of Liptov has always been an important potato-growing region
of Slovakia and was also self-sufficient in livestock farming, especially pigs and sheep.
Efficient use of slaughter by-products was economically crucial for local residents.
Alongside potato mash, dumplings, and potato pastries,
LIPTOVSKÉ DROBY became a beloved specialty.
They were prepared from grated raw potatoes, which thrived in Liptov thanks to soil composition,
climate conditions, and simple cultivation requirements.
One of the first preserved recipes for Liptovské droby appears in the book
“Slovak Folk Cookbook for Every Table” from 1944.
Potatoes are the most important ingredient
Potatoes, onion, salt, marjoram, cracklings, lard… These are the key ingredients for preparing the “potato sausage,” known as Liptovské droby. If the mixture is not rich enough in fat, the result won’t be as good. But above all, potatoes matter most — they must not be too watery. Potatoes that are too young or too old contain too much water and lose their quality. The tastiest LIPTOVSKÉ DROBY are made by Liptovská potravinárska spoločnosť 🙂
Liptovské droby
The product has a round cross-section and the shape of a curved cylinder.
Diameter ranges from 30–50 mm, length from 100–250 mm,
and weight from 100–300 g.
After filling to the desired length, Liptovské droby
are fastened with a wooden skewer.
The filling is made from grated potatoes, ground cracklings, and onion,
seasoned with spices.
The potato content per 1 kg is 75–85% by weight,
cracklings 8–10%, pork lard 5%, and salt up to 1.7%.
The texture is soft, the surface smooth, slightly moist, and clean.
Aroma and taste are distinctly potato-spiced.
Liptovské droby are sold pre-cooked and only require
heat treatment before consumption — baked in the oven or grilled.

The popularity of this delicacy continues to this day. The town of Liptovský Mikuláš has been organizing the Švábkafest potato festival in the Liptov region for several years. Its aim is to preserve potato-growing traditions — not only potatoes as an agricultural crop, but also all products made from them, including Liptovské droby. Švábkafest attracts both local and international visitors who seek out the festival specifically for high-quality traditional regional products. Without a doubt, Liptovské droby are its flagship product.
